So apparently after 6 years GNOME actually fixed the nautilus-based file picker dialog (i.e. adding a button to enter the file path), this is great!
But the GTK file dialog has been broken for 5 years in the same way and you need to know a magic shortcut of Ctrl+L to enter a path
